John Chantarasak’s cooking is influenced heavily by his heritage and a deep respect for flavour.

Born in Liverpool to a British mother and Thai father, John’s food reflects the meeting point between two cultures. His cooking takes the boldness, heat and balance of Thai cuisine and pairs it with the best of the British larder — an approach that feels both personal and distinctive.

Together with his wife Desiree, John built AngloThai from a supper club and pop-up into one of London’s most talked about restaurants. The project has always been rooted in hospitality, thoughtful sourcing and a belief that Thai flavours can be expressed through British-grown ingredients with clarity and confidence.

At AngloThai in Marylebone, John’s food is vibrant and ingredient-led, using smoke, spice, acidity and fire to bring depth to seasonal produce. His approach sits naturally with our philosophy, where flame is not just heat, but a tool for building flavour.
