Method

 

Prepare the Burger

 

  1. Form the beef mince into a loose 180g patty, slightly wider than the bun.
  2. Season generously with salt and black pepper just before cooking.
  3. Cook over the hot Kasai grill for 3–4 minutes per side, depending on your preferred doneness.
  4. During the final minute, place the cheddar on top and allow it to melt.

 

Cook the Bacon

 

  1. Grill the streaky bacon until crisp with good caramelisation from the charcoal.
  2. Set aside and keep warm.

 

Toast the Bun

 

  1. Lightly toast the brioche bun over the grill until golden.

 

Assemble the St George's Cross

 

  1. Spread burger sauce on the base bun.
  2. Add lettuce, tomato and gherkin.
  3. Place the cheeseburger on top.
  4. Arrange two rashers of bacon vertically and two horizontally across the melted cheese to create the St George's Cross.
  5. Finish with the top bun and serve immediately.

 

The smoky flavour from the Kasai charcoal, melted cheddar and crisp bacon combine to create a proper burger with a striking St George's Cross finish.
